One of the most noteable literary uses of rodent-as-man has to be the graphic novels of MAUS, depicting the Polish Jews as rodents during the second World War and Holocaust. The use of different animals expands the story (i.e, the Nazis as cats, Americans as dogs, etc.).

The novels won the Pulitzer Prize in 1992. I'm surprised this wasn't included in the author's article.
