Kosher turkey for Thanksgiving
by PeterG
There is no doubt that brine-soaking a turkey before roasting improves its flavor and juiciness. You can avoid this time-consuming process by buying a kosher turkey. Kosher butchers brine their birds to comply with the dietary rule that as little blood as possible be left in the bird; salt renders the blood. Their goal isn't to produce the most delicious turkey, but they get there all the same--and you don't have to do the work.
