As a restauranture in Puerto Vallarta our wine is chilled at all times. Firstly an open bottle will not last overnight in our extreme heat and humidity also as was mentioned in the article it is more refreshing. I have actually had customers ask for ice cubes in their wine glass. Who knew?!

Not mentioned in the article is what is known as cellar temperature. Cellar, of course referring to a wine celler. Long ago wine cellars were not much more then stone caves under ground. Because of their locations they were usually well below the surface tempurature of the land. These lower temps made for great wine storage and as they were dark wine was also unaffected by light. (Bottles are coloured as light can also ruin wine especially reds) Cellar temperature was usually mid 50s to mid 60s and drunk at that temperature.
