I think the LW might gain some confidence fromt aking a few classes in childhood education. She may not be able to commit to a degree program, but it sounds like she has enough free time to take a class or 2 in early childhood education at a local community college. Those classes could help her get a more stable or higher paying job where she is working now, and, more importantly, increase her confidence. If she hates it, she won't be out of a lot of money or saddled with loans.
I think she does need to venture outside her comfort zone a little--anxiety or not. A community college would be less stressful than a full time degree program and likely closer to home. Her dad might also back off a little if he sees forward progress on the education front, if not into a better job.
