That's true, intent can be difficult to determine and there's no way of knowing if we are 100% right or not. I could be wrong when it comes to the creation narrative being metaphorical, but it's one of those things that really isn't that important to our salvation as Christians. I do think that if it's something important to our Christian faith then it should be taken literally. Is it important as a Christian to take Noah's flood literally? Not really. Is it important as a Christian to take the death and resurrection of Christ literally? Yes, it's what our faith is based upon.
I like how you stated the following: "I believe the bible is 100% true in all it intends to communicate". That's pretty much my own feelings about the bible.
