Tofu Production Byproducts?

Perhaps it doesn't happen in a commercial setting, but making tofu at home, one is left with a couple of other byproducts. For example, okara, the pulp leftover from soymilk, is great for baking.

Were the environmental costs of tofu production taking into account that tofu isn't the only useful resource of the process?
