Because they are zealots, that's why!

Veganism is becoming more and more like a religion, with dogma, tenets, schisms, and proselytization. All agriculture takes a toll on animal life. Ask the Jain of India: they spurn farming as too violent a profession.

This is nothing more than a classic tribal/religious food taboo for weirdos to separate themselves from the rest of us.
