The Numbers will rarely be right

Except for pre-made or pre-portioned items (shakes or Subway sandwiches) most menu items are custom made for the patron. The analyzed portions go out the window when the cook add a little more sauce, sautees with a little more oil, adds a little more cheese -- all to make it "better."

Watch what happens when a patron buys a menued and posted item, takes in to be analyzed and discovers it has 300 more calories than posted... they'll call in the inspectors and lawyers. This just happened at an Appleby's when a Weight Watcher entree was analyzed by an "undercover patron." I'm confident Appleby's Corporate provided the right nutritionals but the kid in the back just made it a little better for that patron. That's the restaurant business.
