If I think a place has good corned beef - I'll usually order a Rueben or a Rachel. Barring that - something with grilled chicken, hot peppers and hot sauce will suffice.
I think you're going to need the meat slicer - and possibly an oven. I used to work in a deli - instead of serving turkey breast lunchmeat, we would cook a whole turkey and serve fresh turkey sandwiches. I usually make myself a turkey rachel using the sandwich steamer we had there (which I would also recommend picking up.)
Other quality sandwiches - chicken salad sandwich dipped in egg batter and pan fried. Actually - adding a fried egg to just about any sandwich makes it better IMO.
A local place has a 3 pepper steak sandwich - (green peppers, banana peppers and jalapenos) - if you like hot food at all - I'd strongly recommend something like that.
I'm a big fan of the local fish sandwich here too - a huge amount of deep fried cod (at least 2x the length of the bun) served with a few slices of cheese. I always try to cover the entire amount of the top surface of the fish in hot sauce. It can get...wait for it.. kind of messy...
As far as a name - there were some good suggestions upthread - hmm - "The Upper Crust" maybe - eh...
I hope you can make this happen - it sounds like a fun idea.
